Dad’s 1st Meatless Monday.


Since I’m home for winter break right now, I’ve been doing a lot of cooking for my family. While they’re not vegan, they’re always open to trying the things that I make. Tonight it was just my dad and I for dinner, and I’m trying to get him to participate in Meatless Mondays, so I made a nice vegan dinner for us, that I think he enjoyed.


^Marinated, grilled portobello mushrooms + fresh thyme.

^Butternut squash & rosemary risotto.
