snow day pesto.

It snowed a lot, we were hungry, and I bought too much basil this week. The obvious solution was to make pesto.

The pesto was incredibly delicious and easy to make.

Vegan Pesto:

-2 cloves garlic

-1/4 cup pine nuts

-2 handfuls basil

-5 TBSP olive oil

-Fresh lemon juice, salt & pepper to taste

Blend everything in a food processor; put on pasta, vegetables, etc.
