Greek Salad & Homemade Baked Falafel.
Homemade Falafel in a Pita Pocket.
With hummus, lettuce, tomato, onion, pickles (inspired by my Israel falafel) & vegan Greek salad.
For the Greek Salad:
Tofu “Feta” Recipe (from TOFU Cookery)
1/4 Cup EVOO
2 TBSP Wine Vinigar (I used red)
1.5 TBSP salt
1 TSP Dried Basil (or 1TBSP fresh)
.5 TSP Dried Oregano
.5 TSP Fresh Black Pepper
1 Pkg Extra Firm Tofu, cubed
Pour the dressing over the tofu, stir, & let marinate in the fridge for at least 1 hour. Gently stir occasionally.
For the falafel I used an easy recipe from ChowVegan.
