Sweet & Sour Tofu with Vegetables.

Making the sauce is super easy & delicious:

1 cup pineapple juice

3 TBSP sugar / sweetener of choice

3 TBSP soy sauce

3 TBSP apple cider vinegar (rice vinegar would be good too)

1.5 TBSP corn starch (dissolved in water)

1 clove garlic, minced

Combine all ingredients, bring boil, reduce to simmer; whisk to avoid clumps. Simmer for 20-25 minutes.
