Weekend Breakfast: Tofu Scramble & Avocado Toast.

Simple, delicious breakfast; enjoy with coffee & vanilla soy creamer.

Simple Tofu Scramble
Serves 2

  • 1/4 block extra firm tofu, excess moisture squeezed out with paper towl
  • 1/2 medium red onion, diced
  • 1 clove garlic, minced
  • 1/4 yellow pepper, diced
  • 1/2 tomato, diced
  • Handful of spinach, roughly chopped
  • Approx. 5 cremini mushrooms, roughly chopped
  • 1 Tbsp thyme
  • 1 tsp turmeric
  • 1/2 tsp chili powder
  • 1/2 tsp chili pepper flakes
  • 1 Tbsp nutritional yeast
  • salt & pepper to taste
  • 2-3 Tbsp water
  • 1 tsp soy sauce
  • 1 Tbsp extra virgin olive oil

1. Heat oil in pan over medium heat. Add onions and saute until soft.

2. In a separate bowl mix together water, spices, garlic, nutritional yeast, soy sauce, salt & pepper. Pour over onions & stir everything together; let mixture simmer for approx. 1 minute.

3. Add peppers, tomato, spinach, & mushrooms. Saute for 3-4 minutes, until all vegetables are soft.

4. Crumble tofu into the pan and combine well. Saute for another few minutes, until the tofu has absorbed color from the spice-water mixture; about 3 minutes.

5. Serve with a little hot sauce (I’m partial to Frank’s Red Hot but Sirracha would work too) & toast!

    Oh, avocado! My favorite food for all time! You can try to mix it with yogurt next time, damn good!
